SWINE GUT HEALTH AND HUMAN HEALTH • Swine are carriers of many food borne zoonotic diseases • Fecal/gut transmissible • Escherichia coli • Salmonella • Campylobacter • Yersinia enterocolitica • Staphylococcus aureus (including MRSA) • Listeria monocytogenes Our goal at slaughter is to prevent gut bacteria contamination of the carcass.
