A time honour Tradition
Brand History Leonor, the property owner, was a strong and kind woman who left a mark on all who knew her. She was born on the estate and remained there until she died. Her grandfather began making CAVA for home consumption in the late 1800 ´ s, a tradition Leonor carried on. Several years ago, I promised her that a great cava someday would be labeled in her memory, and that bottle would be dressed as elegant as her. Today we continue to nuture the legacy she left behind by producing this limited production premium CAVA under her name.
The Vineyards This is where our heart and soul come from. We have 35 hectares with three local Catalan varieties(Macabeu, Xarel·lo and Parellada). Over the years these 3 majestical varietals have united to form the unique character of CAVA with each varietal offering something different and a layer of complexity to each bottle. The total production is about 280.000 kg of grapes. All our vineyards have been replanted using modern double or single guyot trellising, ensuring even ripeness, balanced acidity, freshness and a free flowing air amongst the vines. This system also permits us to use drip irrigation at carefully chosen points in the cycle given this hot dry region.
Finest Quality Maximum care is taken all year to ensure each and every grape reaches the winery in perfect conditions to produce only the finest Cava. Our dedicated team of local vineyard managers know each and every fine and attend to their needs to ensure perfection.
Located in D.O Penedès, t he heart of CA VA , consists of 35 hectares of deep soils, including sand and clay, which are porous yet retain rainwater. The soil is poor in organic matter, Our property calcareous and infertile, but with a high level of magnesium content which brings the acidity necessary to maintain the freshness in our cavas. It also brings good structure and character to our wines. The altitude is 380 meters above sea level. LEONOR DE CARRERA
The harvest Leonor de Carrera pursues an Integrated Viticulture system, carefully following the requirements of the plants and rendering treatment only when essential to the vines respecting too the biodiversity of the environment. To determine the optimum harvest time, we monitor the vines throughout the entire maturation process. Acidity, Ph and sugar content are all analyzed before harvesting and at the same time an organoleptic analysis is made. We are from the region. We grew up amongst the vineyards. Years of experience helps us know when to pick. All the harvesting at our property is done by hand, and the grapes are harvested during the early hours of the morning to maintain maximum freshness possible.
Slowly Matured Our cava rests at least 15 months in our perfectly conditioned underground cellars to have the optimal age. Always at the same temperature, no noise, no light, and when it's ready, the process of degolling, labeling and quality control continues. Later, we label the bottles and store them until the perfect moment when the cava is ready to be consumed..
Tasting notes: APPEARANCE: Our cava Brut has a bright, fresh colour with gold nuances, fine delicate, persistent bubbles. TASTE: It has a beautiful texture and vibrancy on the palate; light, well- balanced, fine acidity, rounded and elegant, memory of sweet fruits, and lingering finish of sweet orange. Good persistence. PAIRING: Oily fish, fresh pasta, mushrooms, sausage, escargots and meat dishes.
