So what the hell is an enzyme anyway? • What’s an enzyme • Where do they come from • How do they work Adrian Dinsdale PhD National Olive Conference, 2017
What is an enzyme? Enzymes are ‘biological catalysts’ They make reactions go faster All living organisms synthesise enzymes for various functions Enzymes are not consumed in a reaction Enzymes do not alter the final product Completely natural, not artificially synthesised Deltagen Australia What’s an enzyme? 19 October, 2017 2 Adrian Dinsdale
Where do enzymes come from? Everywhere! Enzymes for Olive oil processing come from yeast, but are also found naturally in olives The yeast is grown to very high numbers and fed a special diet The yeast secretes enzyme which is collected and purified Deltagen Australia What’s an enzyme? 19 October, 2017 3 Adrian Dinsdale
How do they work? Most commonly used enzymes in olive oil processing are pectinases Pectinase helps break down pectin Pectin is the jelly-like matrix which helps cement plant cells together Degrading pectin therefore increases the extraction of oil from fruit Commonly used in fruit juice extraction, wine making, brewing, etc Deltagen Australia What’s an enzyme? 19 October, 2017 4 Adrian Dinsdale
Why use them? Enzymes increase olive oil yield Most effective when used in conjunction with talc Easier oil separation No change to oil quality Completely natural Cost effective Deltagen Australia What’s an enzyme? 19 October, 2017 5 Adrian Dinsdale
