In a medium pot, cook quinoa 1 x 400g jar P assata as per packet. Set aside. 1 onion, chopped 2 garlic cloves, minced 2. In a large pot, heat 1 tbsp. of 1 tsp chilli flakes olive oil on medium-high heat. 1 tsp cumin Add onion and garlic, and cook 1 /2tsp ground coriander until translucent. Add chilli, seed cumin and coriander, stir. Olive oil 3. M ix in tomatoes, passata and Fresh coriander, avocado, black beans. lime and salad to serve 4. Bring to a boil; then reduce heat, cover and simmer for 20 minutes. Add water if needed. 5. After 20 minutes, stir in reserved quinoa and corn. Cook for another 5 minutes then serve with sides of your choice!
