General Workshop presentation The principle element of the CPL- Workshop “Food and Preservation” 201 8 in Flensburg is the preservation of different kind of foods and nourishment. That will be done by different organic techniques without use of chemicals or refrigerators. Furthermore there will be visits of companies related to the manufacturing or production of ingredients and foods in/around Flensburg. Additionally you will learn about the Danish minority living in Schleswig-Holstein and some of their institutions in Flensburg. Planned production and competences The main focus of the workshop is to produce a wide range of traditionally preserved food - such as Soup, Sauerfleisch and Sauerkraut (typical dishes from Germany), making marmalades, juice, zwieback/rusk, bread, etc. Keep in mind that you will get in touch with different kinds of meat! The LearningLab is located in a special designed kitchen with several identically equipped workplaces. You will learn how to handle and operate different machinery and tools, such as meat chopper, juice extractor, heavy duty mixer and many more. You will work in small groups mixed with host and guest students. Together you will be part of the production and contribute with your special products to common meals.
Overall, you will gain professional competences from working with food and different ingredients, cleaning your workplace, usage of different machinery and techniques. The competences will be displayed in the LearningLab. Safety and working clothes Proper working clothes are mandatory in the LearningLab as there are: cook’s trousers, a white t - shirt, hard-toed-shoes and a hair net (for long haired students). They are provided by the JAW Flensburg. But you can bring your own if this suits you best. You will get an introduction into the JAW-Flensburg safety concept: a mandatory introduction to placement of fire extinguisher, emergency corridors etc., an introduction to all relevant machinery in the workshops available in both German and Danish, including safety cards. Authorities in Germany demand a specific introduction to hygienic issues when working with food. You will get an instruction by the local authorities and a certificate for working with food valid in whole Germany. Rules Stud ents are introduced to JAW’s house rules. Observance of those rules will prevent most conflicts and are mandatory for all students. The most important ones should be common sense: No alcohol/drug consumption before and during work hours and LearningLab activities! Violating these rules results in exclusion from the LearningLab! Use of mobile phones outside the building and in breaks only. Always wear your working clothes in the LearningLab and be careful with all machinery! Violating safety instructions, house rules and/or hygienic regulations can cause severe injuries, illness, trouble and (possibly) an exclusion from the LearningLab. Accommodation and meals You will get breakfast and lunch in the JAW on working days. In the evenings and weekends you have to prepare them by yourselfs. The hostel offers rooms with 3 beds each, two rooms share a common bathroom. They have a nice outside area with garden, TV, a cozy kitchen for guests, a community room, a washing saloon and a very small shop with a lot of useful things when you are away from home. Free Wlan is mandatory. Bed linen could be provided by the hostel – please bring your own if you want. There are several interesting spots around the hostel:

It is possible to buy multiple ticktes at once (for later use), then the price is lower – Ask the staff if you are interested
Buddy selection and preparation Buddies are selected students, preferably recruited from the LearningLab, and will be with you during work and after working hours. The buddies are responsible for making the guest students feel welcome and support them in the new surroundings in the most beautiful city in both Denmark and Germany! The buddies will be involved in the planning of different “after workshop” activities and will be joining in. All our buddies will be briefed in what our guests expect from them. Buddies will be matched to our guests by common interests and spoken languages when possible. (Please remember to fill out a questionnaire for your students) A list of staff and buddies will be provided short before the workshop. After hours/weekend arrangements Yet to be planned! Since Flensburg was long under Danish rule, it is a city of both the German and the Danish culture. There are several Danish institutions like schools, kindergardens, sportclubs and many more! No matter where you are from, there is enough to discover and to enjoy! Visiting student economy The hostel will invoice your institution. JAW provides help with the booking and solving problems. We got a special price wit h 19,50 € per person per night, requiring full payment from the first to the last day of the workshop for all three reserved rooms. For economic reasons it is recommended to check, whether students from different guest institutions can share a room. Breakfast and lunch will be provided and paid by JAW Flensburg. Dinner in the evening and meals on the weekends have to be paid by the students themselves. Round 10 € (DKK 75) each day should cover all costs. It could be a good idea to give some extra money for the weekend. It is possible to pay in DKK and EUR almost everywhere in Flensburg!
