The laboratory refining machines WAFA 20 use an innovative system for the production of all kind of chocolate, chocolate compound and cream starting from the raw materials (sugar, cocoa, cocoa butter, hazelnut paste etc.). The raw materials are manually charged into the charging hopper. Inside it small steel balls have the function to give the fineness to the product and a rotary blade stirrer mixes the various raw materials. The product fineness degree changes according to the working time (which can be electronically or manually set). A pump and a manifold, placed under the charging hopper, allow the product recycling inside the hopper itself and, through a valve, to discharge the product at works end.

The refining machines WAFA 100 use an innovative system for the production of all kind of chocolate, chocolate compound and cream starting from the raw materials (sugar, cocoa, cocoa butter, hazelnut paste etc.). The product is charged (manually or through production fine conduits) into the charging hopper where a photocell controls the maximum level. Inside the hopper steel balls have the function to give the fineness to the product and a rotating rotary blade mixes the various raw materials. The product fineness degree changes according to the working time (which can be electronically or manually set). A pump and a manifold, placed under the charging hopper, allow the product recycling inside the hopper itself. Once the cycle is over the finished product is transferred, through a discharging valve for next uses. Production capacity: Up to 100 kg/h with refining degree of 20-22 microns.

  5. The MIXER Designed to allow the recipe formulation, and pre-mixing of raw materials, for the production of chocolate, chocolate compound and cream. Fitted on loading cells which control the quantity of raw materials introduced into the tank. At the end of the mixing time, the product is transferred to the refining machines WAFA for next treatment, through a pump. The refining machines WAFA 400 They use an innovative system for the production of chocolate, chocolate compound and cream starting from the raw materials (sugar, cocoa, cocoa butter, hazelnut paste etc.). The final product fineness degree changes according to the working time. A pump and a manifold, placed under the loading hopper, allow the continuous product recycling inside the hopper itself. Once the cycle is over the finished product is discharged through an automatic discharging valve. Production capacity: Up to 400 kg in 2h with refining degree of 20-22 micron.

The storage tank series MA are doublewall cylindrical tanks, realized in AISI 304 grade stainless steel, designed to store and keep at constant temperature liquid products such as: cocoa butter, fat, cocoa liquor, chocolate, cream compound chocolate. Inside the tank a rotary blade stirrer controlled by a reduction gear motor, ensures homogeneous product mixing. The stirrer is connected to a bottom scraper to prevent any product sticking to the Tank bottom. The Tank has an interspace where either product heating or product cooling water circulates. The product discharging is possible either manually through the manual outlet valve, or by connecting a pump to the special provided connector.

  7. The storage tank series MAC 15-25 are double-wall cylindrical tanks designed to store and keep at constant temperature liquid chocolate. They are equipped with a product recycling and heating system for volatilization of the contained moisture and acidity. Inside the Tank there is a rotary blade stirrer which ensures homogeneous product stirring. The stirrer is connected to a bottom scraper to prevent any product sticking to the Tank bottom and forming deposits. From the bottom of the tank, the product is conveyed by the product recycling pipe to the heated evaporation cone. Homogeneous product spreading is ensured by a skimmer which controls the thickness of the film present on the cone. A scraper is then provided to scrape the product film off from the cone and drop the resulting product again into the tank. Spreading the product in a thin film aver a heated surface considerably decreases the moisture levels in the product to process.

  8. The Melting tanks series VBM 400- 800-1200 are machines specially designed to quickly melt products such as cocoa butter, cocoa blocks and fat materials. The machine is composed by a double interspace tank, with a bain-marie heating system and machine parts made from AISI 304 stainless steel. Inside the tank there is a melting coil, where the product to be melt must be placed by hand. The tank and the coil have their own stand-alone heating and thermostat system (electric resistances controlled by thermoregulators). The models VBM 800-1200 are equipped with blade stirrers, controlled by gearmotors to keep the melted product in motion.

  9. The tempering machines mod. TAO have been designed to supply a continuous and constant tempered chocolate flow. The product, is charged inside the main hopper and from here it comes into a series of tempering sectors (from 2 up to 4 according different machine models) inside sectors the product is moved by means of a product conveyor warm screw. At the end of each sector there is a thermo regulator, which controls the temperature of the product and the circulation of a cooling liquid into the double wall outside the sector. Another thermo regulator placed along the product conveyor pipeline controls and keeps constant the product temperature. It’s possible to adjust the quantity of the treated chocolate operating on the speed of the product conveyor screw just to adapt it to real needs, In this way, it’s possible to obtain real conservations in the consumptions of cooling water.

MOULDING LINE MAZ RANGE Maz range is composed by models of plant adopting the most recent and complete technologies of production allowing a total adaptability to the customers’ needs as regards to the solid chocolate products, with inclusion of ingredients, fat cream fil led, plain and with alcohol, coupled products, coupling of chocolate with biscuits, wafers etc. ... There is no limit to the capacity of Maz plants to follow customers’ requests transforming time by time and satisfying every productive challenge. A total integration with robotized systems realized by Mazzetti Renato s.r.l. or other ones for the unmoulding or the manipulation of products makes possible the automatization of operations that usually demand waste of workforce and resources.

  11. MOULDING LINE LINEAR RANGE Linear range is composed by plant models that adopt different technologies of production and allow an answer to the customers’ requirement as regards to solid chocolate products, with inclusion of solid and fat creams filling Linear SLD is b ased on points dosing technology making of plant simplicity its force point. Linear OS is based on the one-shot technology making of versatility and minimum dimensions its force point. Linear LNG instead adopts the strip depositing technology to satisfy the requirement to realize bars and tablets with solid inclusions of big dimensions leaving a great margin for the development of new specialties.

  12. “CHERRIES - NUTS P&P” SYSTEM Pick and place system for distribution in moulds of delicate and irregular shape products like cherries, nuts and almonds. The device is suitable for preexisting production plants and it can be realized including displacing systems for the products.

  13. “SPR” SYSTEM Spray system of insulation barrier for the inside of the chocolate shells, suitable to prevent contact between the outer walls and the filling in chocolate pralines.
